Banana Nut Muffins

How can a classic combination like banana nut be improved? By adding some rolled barley! These muffins deliver that favorite taste of sweet banana with the crunch of pecans, mixed with the delicious flavor of barley. And if that wasn’t enough, they smell simply amazing coming out of the oven!
Recipe
2 ripe bananas
2 cups Burl, Maple Syrup & Pecan
1¼ cup milk
2 large eggs
½ cup sugar
¼ cup butter, melted
1 cup all-purpose flour
2 tsp baking powder
½ tsp baking soda
¼ tsp sea salt
½ tsp ground cinnamon
Instructions
Preheat oven to 400°.
Mash bananas in large mixing bowl, then combine with Burl and milk. Add eggs, sugar, and melted butter. Mix well. Add dry ingredients and stir until combined and smooth. Pour into lined muffin trays, filling each about 2/3 full. Bake for 20 minutes. Remove from oven (savor the aroma!), cool, serve, and smile! Great job!
